You can't change the item.dat for your player online because your stuff gets downloaded and updated.

Custom folder shit won't work in multiplayer, although If you "/lp 0/1 nameoffolder" it would make the player use the custom folders settings but others wouldn't be able to see it.
In short: Your item.dat gets replaced. And custom folders won't work in multiplayer.

Set it to read only.
right click on the file -> properties -> read only
Then it can't be changed.
