You can redownload them to check. If it IS every app, it might be easier to just restore to a fresh new firmware.

Firmware is practically the version of your iTouch.
If you have a app that is designed for an iTouch with firmware 3.1, and your iTouch is 3.0, that app won't work.
Connect it to iTunes, go to the iTouch's tab, and click "Check Ofr Updates".
If there is a new update, it will tell you. (though it should do it automatically.)

Firmware is basically what operating system that your ipod touch runs on, people make it sometimes, then people download it, and that's jailbreaking, which is strictly against apples rules. Hold down the top button and the circle button at the same time until it turns off, then plug it into your computer and restore it.
