Either Sue-Key or Ski are correct pronunciations since a lot of the time you ignore the u is Su in japanese.

Like when hear in anime uh.... "[Inser name or 'Onii-Chan' here] Daisuki!" I've never heard it being said as DIE-SUE-KEY only as DAI-SKI
