Dwarf Fortress can be easy depending on where you set your Fortress. Legends is basically the past of a world, so it's easy to see which monsters are still alive, any forgotten beasts, etc.
But I really like Adventure Mode. It's really fun, and kinda feels like NetHack (due to the ASCII characters). A previous version, I actually managed to kill an entire civilization's worth of humans only because I tried attacking a horse which killed two humans, and as I used SHIFT + A, my finger accidentally pressed "b", so I attacked the Peasant trying to avenge the two people. So I basically started a war that I didn't want to happen.
The 2012 update ought to be a challenge, although I have yet to do something there. Maybe begin with a fortress named "Frostice" or something. Although the dwarves are idiots in some cases...
EDIT:
Wow, I actually managed to get my adventurer annihilated by a group of undead. I'll probably have to mod it so that humans can breathe fire for no apparent reason. As for the fortress, one of them already got torn up by monsters from the underworld, so I've begun a new one - and I've already finished a small part of the new fortress today, so my dwarves are hard workers. Not as hard as the leopards that a single adventurer
brutally annihilated...
