I never played quake live, watching the grand final you posted it looks a bit slower paced than quake 2? But maybe it's just this map

there are tons of examples of slow and fast games
it's mostly the map, but it's also how the opponents are playing
a defensive style to build 'stacks' will usually be seen until they're both ready to fight each other
they spam shots and whatnot to bait out each other as well
