I use both DT and the original UI.
Why? I use DT to check the happiness and skill level of my dwarves but the normal UI to actually change their jobs etc. Why? For example, I have one 'specialised' dwarf for important jobs like weaponsmith, armorsmith, engraver, brewer, surgeon, carpenter, mason etc. These have their own workshops and are pretty much working 24/7. It's also the only thing they are allowed to do. For the rest, I have a bunch of dwarves who have ALL farming allowed, ALL hauling, masonry (for rapidly getting a wall built) etc. My fortress works perfectly this way and there is near 0 unoccupation in a 120 dwarves fortress.
Most of the time, I assign one big job at a time. e.g. I set my dwarves to mine a massive load of iron ore, flux stone and limonite/bit. coal. Then I set them to refine the coal. Then I set them to smelt the iron and finally smelt this iron to pig iron and steel. Since the skill level of the dwarves does not affect the quality of the final product but only the time it takes them (which is made up by their amounts), this is an effective way of getting things done in a fort.
After that I may set them to move my animals to a new pasture or haul some useless stone to the atom smasher. So it goes on and on.
